Spinach-Feta Chicken Burgers

This is a good year round recipe. They are great grilled in the summer and I use my Cuisinart grill/griddle in the winter. I like the fact they are easy and quick to make and tasty. This recipe was adapted from a recipe originally found in Family Circle magazine.

Spinach-Feta Chicken Burgers

    INGREDIENTS

1 lb of ground chicken
1/2 to 3/4 bag of fresh spinach or 1 pkg (9 oz) frozen chopped spinach thawed and squeezed dry
1/2 cup reduced fat feta cheese crumbles
1 1/2 tablespoon Italian seasoning
1 tablespoon panko bread crumbs
1 teaspoon dried onion flakes
1 clove garlic finely chopped
Salt and pepper to taste

    DIRECTIONS

1. Heat grill or griddle/grill to medium heat. Coat with a thin layer of olive oil

2. If using fresh spinach, steam until wilted

3. Place ground chicken into large bowl

4.Combine chicken, spinach, feta, Italian seasoning, bread crumbs, onion salt and pepper

5. Shape into 4 equal size patties and place on the grill. Cook for about 12 minutes or thermometer registers 160.

6. Place on serving platter. I sometimes use a bun with side of cole slaw or add the burger to a salad. Leftover burger great for lunch
