I didn’t want to make regular Turkey Tacos as end up eating more taco shell than anything else. My recipe is based on a recipe I found at the blog Iowa Girl Eats. The meal is made in one skillet and only takes 20 minutes to make. It is also good for lunch the next day
Ingredients
1 pound ground turkey
1 small onion diced
1 taco seasoning packet (I found Mrs Dash now makes a great sodium free seasoning packet)
1/2 cup salsa
1 3/4 cup of low sodium chicken broth
1 cup of brown rice
1 cup of Mexican blend shredded cheese
Toppings: crushed tortilla chips, lettuce, tomatoes, extra cheese
Instructions
- Brown ground turkey and diced onion in a large skillet over medium-high heat
- After cooked drain off mixture and return to stove
- Add taco seasoning (do not add water), salsa and chicken broth and bring to boil
- Add rice then cover pan and reduce heat to medium low
- Simmer for 15 minutes or until rice is tender and stir in cheese and fold until melted
- Serve up with above toppings or any of your choice
